I feel its because he new the chef would only make him a better cook, notice how the chef grew softer as the people got better, and it looked like Michaels laid back demeanor can handle the chefs insults. I want to know why Ralph and Michael were able to run the kitchen with rejected cooks and Ramsey couldn't.
