You can change your settings under My Account button located on top of the screen. There is an option under the preferences tabto be hidden while online.
The guests are people that are on the page, but not yet logged in.

What Steve pretty much said. Guests are people who have yet to log in or people who just hit the site...but refuse to register.
People who are invisible are basically hiding thier online status from other members. As an Admin though....no one is invisible to me.
